Ingredients: serves 4
- 10 oz eggplant
- 1 tsp olive oil
- 1/2 tsp salt and fresh pepper
- 1/2 cup Italian Seasoned breadcrumbs
- 2 tbsp parmesan cheese
- 1 large egg white
- oil spray
- 1 cup marinara sauce for dipping
Cut those pieces into 1/4 inch strips. Place the strips into a bowl and season with olive oil, salt, and pepper.
Combine breadcrumbs and parmesan cheese in a bowl. Put egg whites in another.
Dip the strips into the egg whites and then into the breadcrumb and parmesan cheese mixture.
Place the strips onto the baking sheet.
Bake for 10 minutes. You can turn them over and bake for another 5 minutes, or until golden brown.
